      Pick ONE menu item.

      Check these three things:

      1. Recipe
        / build is written
      2. Portion
        tool exists
        (scoop/scale/ladle)
      3. Actual
        portion matches the tool

      If the recipe isn’t written, your staff will “make it how they make it.”
      And your profit will bounce around like a pinball. Or most likely drain as soon as you shoot the ball.

      Write it. Standardize it. Train it.
