Do a 15-minute profit audit this week.
Pick ONE menu item.
Check these three things:
- Recipe
/ build is written - Portion
tool exists (scoop/scale/ladle) - Actual
portion matches the tool
If the recipe isn’t written, your staff will “make it how they make it.”
And your profit will bounce around like a pinball. Or most likely drain as soon as you shoot the ball.… - Recipe

The POS can tell you:
- what
sold - what
time - what the theoretical food cost is (the best POS can show this)
But it can’t tell you:
- what
was over-portioned by the staff - what
got spilled, burnt, mis-made - what
was comped and not rung up - what
got thrown away - what
got stolen (yes… it happens)

@patrick-dixon thanks for your feedback. I’ll take a look at what all the “extras” cost and see if it’s worth a price increase or if I’m just causing myself unnecessary stress 😬. I do that!

@wendy-rote we have a build your own B.Y.O.B. and they still modify the specialty burgers.

I personally like having a specific cost of the sandwich, then if they use it great if not that’s okay! Most restaurants have everything included except Burger King( I know there are others just the one that came to mind) they up-charge you for adding cheese even if you order a plain burger! That’s just my opinion!

HI! We have that issue a lot also. The way we do it is that the burger option they choose shows what comes on it. Guest has an option to modify and change. We have some items that are no charge to add or swap (mustard, ketchup, mayo) but there are other items that incur an additional cost (certain cheeses, jalapenos, bacon, certain sauces,…

We run a street food menu (burgers, corndogs, tenders, apps). My specialty burgers are priced based on the ingredients that come on them.
Lately, I’m seeing more “loaded” requests on top of specialty burgers, and I don’t currently have an add-on pricing structure for <em data-start=”546″…
