    I’m going to start the first discussion!!

    We run a street food menu (burgers, corndogs, tenders, apps). My specialty burgers are priced based on the ingredients that come on them.

    Lately, I’m seeing more “loaded” requests on top of specialty burgers, and I don’t currently have an add-on pricing structure for <em data-start=”546″ data-end=”553″>extra toppings.

    Example: Our Tangy Swiss is BBQ sauce + Swiss + 2 bacon strips + 2 onion rings.<br data-start=”648″ data-end=”651″> We recently got a request to add ketchup, mustard, mayo, pickles, tomato, onion, jalapeños, and French’s fried onions (basically the whole condiment aisle ).

    I’m debating two approaches:

    1. Add language to the menu: “Additional toppings welcome, may incur an extra charge” and price add-ons individually (thinking $0.25–$0.50 each, maybe more for premium items).

    2. Build “anything goes” into the base price so everyone pays the same, whether they load it up or not.

    HI! We have that issue a lot also. The way we do it is that the burger option they choose shows what comes on it. Guest has an option to modify and change. We have some items that are no charge to add or swap (mustard, ketchup, mayo) but there are other items that incur an additional cost (certain cheeses, jalapenos, bacon, certain sauces, etc.). We have that posted on our menu/online ordering pages so there is no question. If they did not look at the menu (sometimes happen) I make sure to let them know it is an upcharge to add that specific item. Typically we do not have concerns with this method and guests do not question it because we have it posted. We have toyed around with the idea to not allow modifications but we hate to do that. Another idea we are thinking of integrating this season is to offer a “build your own”.

    I personally like having a specific cost of the sandwich, then if they use it great if not that’s okay! Most restaurants have everything included except Burger King( I know there are others just the one that came to mind) they up-charge you for adding cheese even if you order a plain burger! That’s just my opinion!

    @wendy-rote we have a build your own B.Y.O.B. and they still modify the specialty burgers.

    @patrick-dixon thanks for your feedback. I’ll take a look at what all the “extras” cost and see if it’s worth a price increase or if I’m just causing myself unnecessary stress 😬. I do that!
